Tait Miller, our guide for this amazing trip, spent over a decade working in top London restaurants and running companies of his own but felt he hadn't found his place in the industry.
Seeking a greater connection to the ingredients he uses and in search of a deeper knowledge about the history of cooking, he began to expand his learning, practice new skills and forge a path towards the ‘wild’ life he wanted to live.
From time spent loch-side cooking on a fire in Scotland’s stunning Cairngorms National Park to hunting out rare ingredients in deepest Asia, he has developed an unmatchable gift for wild cooking and understanding of what nature has to offer a curious chef.
On this trip he will share all he has learned and join you in a journey to discover the abundance of natural delights on offer in the unbeatably beautiful Raja Ampat region.
Itinerary
With Sorong as the start and end of your trip, Culture & Cuisine will take you into the very heart of Raja Ampat - a tropical paradise famous for its extraordinary marine biodiversity. Exact activities will be tailored on a trip-by-trip basis so this serves as a guide for what to might expect on this unrivalled adventure.
At the centre of the Coral Triangle, Raja Ampat is renowned worldwide for the incredible diving on offer. But there is also so much to see and experience on land as well. Meaning ‘Four Kings’, the region is named after its four main islands – Waigeo, Misool, Salawati, and Batanta – but encompasses over 1,500 islands in total. The ‘Kings’ all offer something different and are each worthy of exploration for their own individual reasons.
Day 1: Arrival & introduction to Waisai
- Morning: Guests arrive and board the vessel and we make the short crossing to Waisai.
- Afternoon: Explore Waisai market to procure local ingredients. Guided tour discussing the island’s religions, history, and food culture. Locally-sourced food for lunch onboard.
- Evening: Optional fermentation lesson for interested guests. Vegetarian dinner featuring local dishes. Early night to rest and acclimatise.
Day 2: Avian exploration & culinary delights
- Early morning: Birds of Paradise hike from Mandum Homestay before witnessing sunrise while enjoying fruits and local snacks at the viewpoint.
- Morning: Return for a hearty breakfast.
- Late morning: Tour of Raja Ampat Eco Lodge focusing on sustainable practices and local ecology.
- Afternoon: Cooking class – learn to prepare gado-gado (Indonesian salad) using freshly-harvested leaves. Kayak through the Gam/Waigeo passage with insights into Alfred Russell Wallace’s explorations.
- Evening: Overnight motor to the pearl farm.
Day 3: Pearl farming & marine exploration
- Morning: Visit to the pearl farm to understand oyster cultivation.
- Midday: Cooking session featuring oysters, culminating in a land-based lunch.
- Afternoon: Leisure time for exploration, relaxation, or an optional dive at a nearby site. For non-divers paddleboarding, kayaking, and snorkelling is also available.
- Evening: Travel to Puncak Pindito in Wayag.
Day 4: Wayag’s natural wonders
- Sunrise: Ascend to a viewpoint with juice and snacks to greet the day.
- Morning: Optional dive to explore the marine biodiversity.
- Afternoon: Kayaking among the atolls.
- Sunset: Beach setup for a tepache drink, fermented on day one.
- Evening: Overnight journey to Piaynemo.
Day 5: Piaynemo’s panoramic views & culinary skills
- Sunrise: Climb to Piaynemo’s viewpoint for breathtaking vistas.
- Morning: Dive at Melissa's Garden dive site.
- Afternoon: Tempeh-making class, delving into fermentation techniques.
- Evening: Travel to the Fam Islands.
Day 6: Relaxation & fermentation insights
- Morning: Optional diving sessions exploring the vibrant coral reefs.
- Afternoon: Leisure time for relaxation.
- Evening: Discussion on the health benefits and origins of fermented foods, complemented by a dinner featuring the fermented vegetables prepared earlier.
- Night: Overnight voyage to Misool.
Days 7 & 8: Misool’s mysteries
- Activities over two days to include:
Visit to Jellyfish Lake.
Kayaking to explore ancient cave art.
Exploration of Banks Bay.
Ascend to various viewpoints for panoramic views.
Diving sessions to discover underwater wonders.
- Evening of Day 8: Travel back, stopping at a pristine beach for the final celebration.
Day 9: Culmination feast
- Daytime: Beach feast incorporating all culinary elements learned throughout the journey, celebrating the fusion of culture, cuisine, and community.
Day 10: Farewell
- Morning: Guests disembark, concluding the enriching Raja Ampat culinary culture cruise.
